Ingredients

  • 200g spaghetti
  • 50g expired Bottarga, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

Cook the spaghetti according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.

Add the grated Bottarga to the skillet and cook for another 2 minutes, stirring occasionally.

Add the cooked spaghetti to the skillet along with the lemon zest and juice. Toss well to coat the pasta with the Bottarga mixture.

Season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.
