Ingredients

  • 200g slightly expired Bottarga
  • 4 medium beets
  • 2 cups mixed salad greens
  • 1/4 cup chopped fresh herbs
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Preheat the oven to 400°F (200°C).

2. Wrap the beets individually in aluminum foil and place them on a baking sheet. Roast for about 45 minutes or until tender when pierced with a fork.

3. Remove the beets from the oven and let them cool. Once cooled, peel the beets and cut them into thin slices.

4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

5. In a large bowl, combine the salad greens, sliced beets, and chopped fresh herbs.

6. Drizzle the dressing over the salad and gently toss to coat.

7. Grate the slightly expired Bottarga over the salad.
