
Blueberry Banana Corn Muffins

Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup bran flakes
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 ripe banana, mashed
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/2 cup fresh blueberries
- 1/4 cup chocolate chips
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, cornmeal, bran flakes, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the mashed banana, buttermilk, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the blueberries and chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Serve the muffins warm or at room temperature.
