
Century Egg and Pork Congee
A comforting congee recipe that incorporates expired Century Eggs and reduces food waste.

Ingredients
- 1/2 cup jasmine rice
- 4 cups chicken broth
- 1 expired Century Egg, peeled and diced
- 1/2 cup cooked shredded pork
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot, combine jasmine rice and chicken broth. Bring to a boil over medium-high heat.
- Reduce heat to low and simmer for 30-40 minutes, stirring occasionally, until the rice has broken down and the mixture thickens.
- Add diced Century Egg, shredded pork, grated ginger, soy sauce, and sesame oil to the congee. Stir well to combine.
- Continue cooking for another 5-10 minutes until the Century Egg and pork are heated through.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and serve hot.
