Ingredients
- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unopened UHT milk (past its expiration date but still safe to consume)
- 1 egg
- 2 tablespoons melted butter
- Extra butter or oil for cooking
Instructions
- In a mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the UHT milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
- Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, adding more butter or oil as needed.
- Serve the pancakes warm and enjoy!
