Ingredients
- 1 cup expired shelled almonds, finely chopped
- 1/2 cup breadcrumbs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 2 boneless, skinless chicken breasts, cut into strips
- 1/4 cup flour
- 2 eggs, beaten
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the expired shelled almonds, breadcrumbs, salt, pepper, and paprika.
- Dredge each chicken strip in flour, then dip it into the beaten eggs, and finally coat it with the almond mixture.
- Place the coated chicken strips on the prepared baking sheet and bake for 15-20 minutes or until golden and cooked through.
- Serve the almond crusted chicken tenders with your favorite dipping sauce.
- Note: Ensure the chicken is fully cooked by checking the internal temperature reaches 165°F (74°C).
- Discard any leftovers after 3 days.
