
Goat Cheese and Spinach Stuffed Chicken Breast

- 2 chicken breasts
- 1 cup spinach, chopped
- 1/2 cup expired goat cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally, without cutting all the way through.
- Season the inside of the chicken breasts with salt and pepper.
- In a bowl, combine the chopped spinach and expired goat cheese.
- Divide the spinach and goat cheese mixture evenly and stuff it into the chicken breasts.
- Secure the chicken breasts with toothpicks to keep the filling in place.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the stuffed chicken breasts for 3-4 minutes on each side until browned.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the toothpicks and let the chicken rest for a few minutes before serving.
