
Mushroom Stir-Fry
A quick and easy stir-fry recipe that makes use of expired mushrooms, reducing food waste without compromising food safety.

Ingredients
- 1 cup expired mushrooms, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the sliced mushrooms, bell pepper, and onion to the skillet, and stir-fry for 3-4 minutes until slightly tender.
- Add the minced garlic and continue to stir-fry for another minute.
- In a small bowl, whisk together soy sauce and sesame oil.
- Pour the sauce over the vegetables and stir to coat evenly. Cook for an additional 1-2 minutes.
- Season with salt and pepper to taste.
- Serve the mushroom stir-fry over steamed rice or noodles.
