
Sea Cucumber Stir-Fry

Ingredients
- 200g expired dried sea cucumber
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- Salt and pepper to taste
Instructions
- In a bowl, soak the dried sea cucumber in warm water for 1 hour or until softened. Rinse well.
- In a wok or large skillet, heat the vegetable oil over medium-high heat.
- Add the onion and garlic, and stir-fry for 2 minutes until fragrant.
- Add the sea cucumber, bell pepper, and carrot. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, salt, and pepper. Pour the sauce into the wok and stir well to coat the ingredients.
- Continue stir-frying for another 2 minutes until the sauce thickens and coats the sea cucumber and vegetables.
- Remove from heat and serve hot with steamed rice.
