
Caramelized Banana Pancakes
Delicious and fluffy pancakes made with expired whipping cream, topped with caramelized bananas.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup expired whipping cream (14 days after expiry)
- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 2 ripe bananas, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter
- Maple syrup, for serving
Instructions
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the expired whipping cream, milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are fine.
Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
In a separate skillet, melt the butter over medium heat. Add the sliced bananas and sprinkle with brown sugar. Cook until caramelized, flipping once.
Serve the pancakes topped with caramelized bananas and drizzle with maple syrup.
