Ingredients

  • 2 cans of expired but still safe canned lima beans
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

In a large pot, heat some olive oil over medium heat.

Add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.

Rinse the canned lima beans under cold water and drain well.

Add the lima beans, vegetable broth, dried thyme, and bay leaf to the pot.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.

Remove the bay leaf and season the soup with salt and pepper to taste.

Using an immersion blender or a regular blender, blend about half of the soup until smooth. This will give the soup a creamy texture while still leaving some chunkiness.

Return the blended soup to the pot and stir well to combine.

Simmer for an additional 5 minutes to heat through.
