Ingredients

  • 2 cans of expired but still safe canned lima beans
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

Rinse the canned lima beans under cold water and drain well.

In a large bowl, combine the lima beans, diced red bell pepper, chopped red onion, and fresh parsley.
