Ingredients

  • 2 cans of unopened lima beans
  • 1 onion
  • 2 cloves of garlic
  • 1 inch piece of ginger
  • 1 tomato
  • 2 green chilies
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

Drain and rinse the canned lima beans.

Finely chop the onion, garlic, ginger, tomato, and green chilies.

Heat oil in a pan and add the chopped onion, garlic, and ginger. Saute until golden brown.

Add the chopped tomato and green chilies. Cook until the tomato softens.

Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.

Add the drained lima beans and cook for 5 minutes.

Add garam masala and cook for another 2 minutes.

Garnish with fresh cilantro.

Serve hot with rice or bread.
