Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup slightly expired orange juice
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the orange juice, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool for a few minutes before transferring the muffins to a wire rack to cool completely.
