Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup slightly expired orange juice
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the orange juice, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for a few minutes before transferring the muffins to a wire rack to cool completely.
