Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup slightly expired orange juice
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the orange juice, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool for a few minutes before transferring the muffins to a wire rack to cool completely.

Ingredients

  • 4 chicken breasts
  • 1 cup orange juice bottled (slightly past expiration)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. In a bowl, whisk together the orange juice, soy sauce, honey, minced garlic, grated ginger, salt, and black pepper.
  2. Place the chicken breasts in a ziplock bag and pour in the marinade. Seal the bag and refrigerate for at least 30 minutes, or overnight for best results.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade.
  4. Cook the chicken in the skillet for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  5. In a small bowl, whisk together the cornstarch and water. Pour the reserved marinade into the skillet and bring to a simmer.
  6. Whisk in the cornstarch mixture and cook for 1-2 minutes, or until the sauce has thickened.
  7. Return the chicken to the skillet and coat each piece with the orange juice glaze. Cook for an additional 2-3 minutes, or until the chicken is heated through.
  8. Serve the orange juice glazed chicken over rice or noodles, garnished with sesame seeds and sliced green onions.
