Ingredients

  • 4 chicken breasts
  • 1 cup orange juice bottled (slightly past expiration)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

In a bowl, whisk together the orange juice, soy sauce, honey, minced garlic, grated ginger, salt, and black pepper.

Place the chicken breasts in a ziplock bag and pour in the marinade. Seal the bag and refrigerate for at least 30 minutes, or overnight for best results.

Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade.

Cook the chicken in the skillet for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In a small bowl, whisk together the cornstarch and water. Pour the reserved marinade into the skillet and bring to a simmer.

Whisk in the cornstarch mixture and cook for 1-2 minutes, or until the sauce has thickened.

Return the chicken to the skillet and coat each piece with the orange juice glaze. Cook for an additional 2-3 minutes, or until the chicken is heated through.

Serve the orange juice glazed chicken over rice or noodles, garnished with sesame seeds and sliced green onions.
