Almond Energy Balls
A healthy and nutritious snack made with expired but safe almonds. These energy balls are packed with flavor and are perfect for reducing food waste.
Ingredients
- 1 cup expired almonds, finely ground
- 1 cup dates, pitted
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup shredded coconut, for rolling (optional)
Instructions
In a food processor, combine the almonds, dates, cocoa powder, honey, vanilla extract, and salt. Process until the mixture comes together and forms a sticky dough.
Take small portions of the dough and roll them into bite-sized balls.
If desired, roll the balls in shredded coconut for added texture and flavor.
Place the energy balls in an airtight container and refrigerate for at least 30 minutes to firm up.
Serve chilled and enjoy as a snack.
Note: Although the almonds are expired, grinding them and combining them with other ingredients ensures food safety. However, if the almonds have an off smell or taste, do not use them.
