
Almond Crusted Chicken Tenders
A delicious and crispy chicken tender recipe that makes use of expired but safe almonds. The almonds add a flavorful crunch to the dish while reducing food waste.

- 1 cup expired almonds, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 large eggs
- 1 pound chicken tenders
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the chopped almonds, breadcrumbs, Parmesan cheese, dried oregano, garlic powder, salt, and black pepper.
- Place the flour in another shallow bowl and beat the eggs in a third shallow bowl.
- Dip each chicken tender in the flour, shaking off any excess. Then dip it in the beaten eggs, allowing any excess to drip off. Finally, coat it in the almond mixture, pressing gently to adhere.
- Place the coated chicken tenders on the prepared baking sheet and lightly spray them with cooking spray.
- Bake for 15-20 minutes or until the chicken is cooked through and the coating is golden and crispy.
- Serve hot with your favorite dipping sauce.
- Note: The almonds used in this recipe are expired but still safe to consume. However, if the almonds have an off smell or taste, do not use them.
