Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 4 expired Lap Cheong sausages, sliced
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the Lap Cheong slices to the skillet and cook until slightly crispy, about 5 minutes.

Remove the Lap Cheong from the skillet and set aside.

In the same skillet, add the minced garlic, peas, and carrots. Cook until the vegetables are tender, about 5 minutes.

Push the vegetables to one side of the skillet and add the cooked rice to the other side.

Pour the soy sauce over the rice and stir to combine with the vegetables.

Add the cooked Lap Cheong back to the skillet and stir to combine with the rice and vegetables.

Cook for an additional 3-4 minutes, or until everything is heated through.
