
Lap Cheong Fried Rice
A delicious fried rice recipe that puts expired Lap Cheong to good use, ensuring food safety.

Ingredients
- 2 cups cooked rice (preferably day-old)
- 4 expired Lap Cheong sausages, sliced
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the Lap Cheong slices to the skillet and cook until slightly crispy, about 5 minutes.
- Remove the Lap Cheong from the skillet and set aside.
- In the same skillet, add the minced garlic, peas, and carrots. Cook until the vegetables are tender, about 5 minutes.
- Push the vegetables to one side of the skillet and add the cooked rice to the other side.
- Pour the soy sauce over the rice and stir to combine with the vegetables.
- Add the cooked Lap Cheong back to the skillet and stir to combine with the rice and vegetables.
- Cook for an additional 3-4 minutes, or until everything is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
