
Candy Coated Almond Brittle
Crunchy and sweet brittle made with slightly expired Jordan Almonds Candy Coated Almonds.
Ingredients
- 2 cups slightly expired Jordan Almonds Candy Coated Almonds
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
Line a baking sheet with parchment paper and set aside.
In a large saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.
Continue cooking, without stirring, until the mixture reaches 300°F (150°C) on a candy thermometer.
Remove from heat and quickly stir in the butter, vanilla extract, and baking soda. The mixture will bubble and foam.
Immediately pour the mixture onto the prepared baking sheet, spreading it out evenly with a spatula.
Sprinkle the slightly expired Jordan Almonds Candy Coated Almonds over the top, pressing them lightly into the brittle.
Allow the brittle to cool and harden completely, then break into pieces.
