
Goat Cheese and Spinach Stuffed Chicken Breast
This recipe makes use of expired goat cheese to create a delicious and safe stuffed chicken breast. Ensure the chicken is cooked thoroughly to eliminate any potential bacteria.
Ingredients
- 2 chicken breasts
- 1 cup spinach, chopped
- 1/2 cup expired goat cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
Preheat the oven to 375°F (190°C).
Butterfly the chicken breasts by slicing them horizontally, without cutting all the way through.
Season the inside of the chicken breasts with salt and pepper.
In a bowl, combine the chopped spinach and expired goat cheese.
Divide the spinach and goat cheese mixture evenly and stuff it into the chicken breasts.
Secure the chicken breasts with toothpicks to keep the filling in place.
Heat olive oil in an oven-safe skillet over medium heat.
Sear the stuffed chicken breasts for 3-4 minutes on each side until browned.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove the toothpicks and let the chicken rest for a few minutes before serving.
