
Avocado Toast
A simple and nutritious avocado toast recipe that makes use of expired avocados.
Ingredients
- 2 ripe avocados, past their expiration date but still safe to consume (7 days after expiry)
- 4 slices of whole grain bread
- 2 tablespoons olive oil
- 1 clove garlic, peeled and halved
- Salt and pepper, to taste
- Optional toppings: sliced tomatoes, feta cheese, red pepper flakes, etc.
Instructions
Preheat the oven to 350°F (175°C).
Place the bread slices on a baking sheet and brush one side of each slice with olive oil.
Rub the halved garlic clove over the oiled side of each slice.
Bake the bread slices in the preheated oven for about 10 minutes, or until toasted and crisp.
While the bread is toasting, cut the avocados in half, remove the pits, and scoop out the flesh into a bowl.
Mash the avocado flesh with a fork until smooth.
Season the mashed avocado with salt and pepper to taste.
Once the bread slices are toasted, spread the mashed avocado evenly on the untoasted side of each slice.
Add any desired toppings like sliced tomatoes, crumbled feta cheese, or a sprinkle of red pepper flakes.
Serve immediately as a nutritious and delicious breakfast or snack.
