
Spicy Sea Cucumber Soup
Prepare a flavorful and nourishing soup using expired dried sea cucumber, reducing food waste while ensuring food safety.
Ingredients
- 200g expired dried sea cucumber
- 4 cups chicken or vegetable broth
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 1 red chili, sliced
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
In a bowl, soak the dried sea cucumber in warm water for 1 hour or until softened. Rinse well.
In a large pot, heat the vegetable oil over medium heat.
Add the onion, garlic, ginger, and red chili. Sauté for 2-3 minutes until fragrant.
Add the sea cucumber, mushrooms, and bok choy. Stir for another 2 minutes.
Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and let simmer for 15-20 minutes until the sea cucumber is tender.
Stir in soy sauce, rice vinegar, sesame oil, salt, and pepper. Taste and adjust seasonings if needed.
Remove from heat and serve hot, garnished with chopped green onions.
