Ingredients

  • 200g expired dried sea cucumber
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

Instructions

In a bowl, soak the dried sea cucumber in warm water for 1 hour or until softened. Rinse well.

In a wok or large skillet, heat the vegetable oil over medium-high heat.

Add the onion and garlic, and stir-fry for 2 minutes until fragrant.

Add the sea cucumber, bell pepper, and carrot. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.

In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, salt, and pepper. Pour the sauce into the wok and stir well to coat the ingredients.

Continue stir-frying for another 2 minutes until the sauce thickens and coats the sea cucumber and vegetables.

Remove from heat and serve hot with steamed rice.
