
Asiago Cheese Frittata
This frittata recipe creatively uses expired Asiago cheese to reduce food waste. Ensure the cheese is still safe to consume before using.

Ingredients
- 6 large eggs
- 1/2 cup expired Asiago cheese, grated
- 1/2 cup spinach, chopped
- 1/4 cup cherry tomatoes, halved
- 1/4 cup onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk the eggs until well beaten.
- Add the expired Asiago cheese, spinach, cherry tomatoes, onion, salt, and pepper to the bowl. Mix well.
- In an oven-safe skillet, heat the olive oil over medium heat.
- Pour the egg mixture into the skillet and cook for 3-4 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set in the center.
- Remove from the oven and let it cool for a few minutes before slicing.
- Serve warm and enjoy!
