
Asiago Cheese and Spinach Stuffed Chicken Breast

- 4 boneless, skinless chicken breasts
- 1 cup expired Asiago cheese, grated
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing horizontally through the middle, without cutting all the way through.
- In a bowl, combine the expired Asiago cheese, chopped spinach, minced garlic, dried oregano, dried basil, salt, and black pepper.
- Divide the cheese and spinach mixture evenly among the butterflied chicken breasts, spreading it out.
- Fold each chicken breast in half to enclose the filling, and secure with toothpicks if needed.
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
- Remove from the oven, discard the toothpicks if used, and let the chicken rest for a few minutes before serving.
