
Abalone and Vegetable Soup

Ingredients
- 1 cup expired abalone, sliced
- 4 cups vegetable broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 cup chopped kale or spinach
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic to the pot. Cook until the onion becomes translucent.
- Add sliced abalone, carrot, and celery to the pot. Stir and cook for 2-3 minutes.
- Pour vegetable broth into the pot and bring to a boil.
- Reduce heat to low and let the soup simmer for about 15-20 minutes, or until the vegetables are tender.
- Add chopped kale or spinach to the pot and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh herbs if desired.
