
Zinc Gluconate Pancakes
These fluffy pancakes are a delightful way to use up slightly expired Zinc Gluconate Tablets. They are safe to consume and help reduce food waste.
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 Zinc Gluconate Tablets, slightly expired
- 2 cups milk
- 2 large eggs
- 4 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup fresh berries for topping
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Crush the slightly expired Zinc Gluconate Tablets into a fine powder and add it to the dry ingredients. Mix well.
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat.
Scoop 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm, topped with fresh berries.
