
Zinc Gluconate Muffins
These delicious muffins are a great way to repurpose slightly expired Zinc Gluconate Tablets, ensuring a nutritious snack while reducing food waste.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 slightly expired Zinc Gluconate Tablets, crushed
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and crushed Zinc Gluconate Tablets.
In a separate bowl, mix together the milk, vegetable oil, applesauce, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove from the oven and let cool in the muffin tin for 5 minutes.
Transfer the muffins to a wire rack to cool completely before serving.
