Ingredients

  • 2 cups of slightly expired Vegan Buddha Bowl
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of curry powder
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 1 cup of chopped vegetables (such as carrots, bell peppers, and broccoli)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions
