Ingredients

  • 2 large zucchinis
  • 1 cup unopened packaged mozzarella, slightly past expiration
  • 1 cup marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a boat-like shape.

In a bowl, mix the scooped-out zucchini flesh with the mozzarella, marinara sauce, Parmesan cheese, breadcrumbs, olive oil, dried oregano, salt, and pepper.

Fill the zucchini boats with the mixture, pressing down lightly.

Place the filled zucchini boats on a baking sheet and bake for 30-35 minutes, or until the zucchini is tender and the cheese is melted and golden.

Remove from the oven and let them cool for a few minutes before serving.
