
Cheesy Spinach Stuffed Chicken Breast
A delicious and protein-packed dish that makes use of expired Edam cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cooked spinach, squeezed dry
- 1 cup expired Edam cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket into each chicken breast.
In a bowl, combine the cooked spinach, expired Edam cheese, garlic powder, paprika, salt, and pepper.
Stuff each chicken breast with the spinach and cheese mixture, securing with toothpicks if necessary.
In a large oven-safe skillet, heat the olive oil over medium-high heat.
Sear the stuffed chicken breasts on both sides until golden brown, about 2-3 minutes per side.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the cheese is melted.
Remove the toothpicks before serving.
