Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 4 cups vegetable broth
- 1 cup milk
- 1 cup expired Edam cheese, grated
- Salt and pepper to taste

Instructions

In a large pot, heat the olive oil over medium heat.

Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the broccoli florets and sauté for another 2-3 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes or until the broccoli is tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot over low heat and stir in the milk and expired Edam cheese until melted and well combined.

Season with salt and pepper to taste.
