Ingredients
- 1 cup expired dried lentils
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions

Rinse the expired lentils under cold water and remove any debris.

In a large pot, heat olive oil over medium heat.

Add onion, carrots, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.

Add cumin, paprika, salt, and pepper. Stir to coat the vegetables.

Add the expired lentils and vegetable broth to the pot.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes or until the lentils are tender.
