Ingredients
- 1 cup expired dried lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 tomato, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions

In a saucepan, combine the expired lentils and water. Bring to a boil over high heat.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the lentils are tender.

Drain any excess water from the cooked lentils and let them cool.

In a large bowl, combine the cooked lentils, cucumber, bell pepper, tomato, red onion, and parsley.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
