
Spirulina Pancakes
These fluffy and nutritious pancakes are a great way to use up slightly expired spirulina powder while minimizing food waste. The expiration date is not a strict deadline, and spirulina powder can still be used safely if properly stored.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon spirulina powder
- 1 cup milk
- 1 egg
- 2 tablespoons vegetable oil
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, salt, and spirulina powder.
In a separate bowl, beat the egg and then add the milk and vegetable oil. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
Heat a non-stick skillet or griddle over medium heat.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancakes and the edges are slightly set, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
Serve the spirulina pancakes warm with your favorite toppings, such as fresh fruits, honey, or maple syrup.
