Ingredients

  • 1 cup dates, pitted
  • 1 cup almonds
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 2 tablespoons expired spirulina powder
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

In a food processor, add the dates, almonds, shredded coconut, chia seeds, expired spirulina powder, honey or maple syrup, vanilla extract, and salt.

Pulse the mixture until everything is well combined and forms a sticky dough.

Take small portions of the dough and roll them into bite-sized balls. If the mixture is too sticky, slightly wet your hands with water.

Place the energy balls on a baking sheet lined with parchment paper.

Refrigerate the energy balls for at least 30 minutes to firm up.
