
Salted Duck Egg Omelette
A delicious omelette recipe that uses slightly expired but still safe salted duck eggs to reduce food waste.

Ingredients
- 4 slightly expired salted duck eggs
- 1 tablespoon vegetable oil
- 2 green onions, chopped
- 1 small tomato, diced
- Salt and pepper to taste
Instructions
- Crack the salted duck eggs into a bowl and beat lightly.
- Heat the vegetable oil in a frying pan over medium heat.
- Add the green onions and tomato to the pan and sauté for 2-3 minutes.
- Pour the beaten salted duck eggs into the pan and let it cook for 2-3 minutes until the bottom sets.
- Gently flip the omelette and cook for another 2-3 minutes until fully cooked.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
