
Ricotta Pancakes
These fluffy ricotta pancakes are a great way to use up expired ricotta cheese. By cooking the pancakes thoroughly, you can ensure food safety.
Ingredients
- 1 cup expired ricotta cheese
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup plain yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- Butter or oil for greasing the pan
- Maple syrup, fresh berries, or powdered sugar for serving
Instructions
In a large bowl, whisk together the expired ricotta cheese, flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the milk, plain yogurt, eggs, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
Heat a non-stick skillet or griddle over medium heat and grease with butter or oil.
Pour 1/4 cup of the batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on the other side.
Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Serve the ricotta pancakes hot with maple syrup, fresh berries, or powdered sugar.
