
Grilled Chicken and Vegetable Skewers with Red Wine Vinaigrette Marinade
Delicious and juicy chicken and vegetable skewers marinated in a flavorful red wine vinaigrette, using expired but safe Red Wine Vinaigrette Salad Dressing.
Ingredients
- 1 lb (450g) boneless, skinless chicken breasts, cut into cubes
- 2 cups mixed vegetables (such as bell peppers, onions, and cherry tomatoes)
- Expired Red Wine Vinaigrette Salad Dressing
- Wooden skewers, soaked in water for 30 minutes
Instructions
Preheat the grill to medium-high heat.
Thread the chicken cubes and mixed vegetables onto the soaked wooden skewers, alternating between chicken and vegetables.
Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
During the last 5 minutes of grilling, brush the expired Red Wine Vinaigrette Salad Dressing onto the skewers, turning and brushing occasionally for extra flavor.
Remove the skewers from the grill and let them rest for a few minutes.
Serve the grilled chicken and vegetable skewers with a side of fresh salad or rice, and enjoy!
