Ingredients

  • 8 oz dried rice noodles
  • 1/4 cup expired peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup warm water
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (such as bell peppers, carrots, and snap peas)
  • 1/4 cup chopped peanuts
  • Fresh cilantro, for garnish

Instructions

Cook the rice noodles according to the package instructions. Drain and set aside.

In a small bowl, whisk together the expired peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, red pepper flakes, and warm water until smooth. Set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, or until tender-crisp.

Add the cooked rice noodles to the skillet and pour the peanut sauce over them.

Toss everything together until well coated and heated through.

Remove from heat and garnish with chopped peanuts and fresh cilantro.
