
Peach Baby Food Pancakes

Ingredients
- 1 cup expired peach baby food (5 days past expiry)
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup milk
- 1 egg
- 2 tablespoons vegetable oil
Instructions
In a mixing bowl, whisk together the expired peach baby food, all-purpose flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the vanilla extract, milk, egg, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are fine.
Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter.
Pour 1/4 cup of the pancake batter onto the hot pan for each pancake.
Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter.
