Ingredients

  • 1 pound expired dry pasta
  • 2 cups mixed vegetables (such as bell peppers, carrots, broccoli, and peas)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

Cook the expired pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute.

Add the mixed vegetables to the skillet and cook until they are tender-crisp, about 5-7 minutes.

Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese and cook until the sauce has thickened, about 2-3 minutes.

Season the sauce with salt and pepper to taste.
