
Tofu Scramble
A hearty tofu scramble recipe that creatively uses expired tofu to minimize food waste. Cook tofu properly to ensure food safety.
Ingredients
- 1 cup expired tofu, crumbled
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, for garnish
- Toasted bread, for serving
Instructions
Heat vegetable oil in a large skillet over medium heat.
Add diced onion and bell pepper, and cook until softened, about 5 minutes.
Add minced garlic and cook for an additional minute.
Crumble the expired tofu into the skillet and stir well to combine.
In a small bowl, mix together turmeric, paprika, cumin, salt, and pepper.
Sprinkle the spice mixture over the tofu and vegetables, stirring until well coated.
Cook for 5-7 minutes, or until the tofu is heated through.
Garnish with fresh parsley and serve the tofu scramble with toasted bread.
