
Expired Mozzarella Stuffed Chicken Breast
A delicious stuffed chicken breast recipe that uses expired Mozzarella cheese. Ensure the chicken is cooked thoroughly to ensure food safety.
Ingredients
- 2 boneless, skinless chicken breasts
- 4 oz expired Mozzarella cheese, shredded
- 1/4 cup sun-dried tomatoes, chopped
- 2 tbsp fresh basil, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
Preheat the oven to 375°F (190°C).
Using a sharp knife, butterfly the chicken breasts by slicing them horizontally, but not all the way through.
In a bowl, mix together the shredded Mozzarella cheese, sun-dried tomatoes, and fresh basil.
Season the inside of each chicken breast with salt and pepper.
Stuff each chicken breast with the Mozzarella cheese mixture, then press the edges together to seal.
Heat olive oil in a skillet over medium-high heat.
Sear the chicken breasts on both sides until golden brown, about 2-3 minutes per side.
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
Ensure the chicken reaches an internal temperature of 165°F (74°C) for proper food safety.
Let the chicken rest for a few minutes before slicing and serving.
