
Mint Chocolate Brownies
A delicious and fudgy brownie recipe that uses expired mints to add a refreshing minty flavor. The mints are safe to consume even after their expiration date.
Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1 cup mint candies (expired but still safe to consume), chopped
- 1/2 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a microwave-safe bowl, melt the butter. Add the sugar and stir until well combined.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped mint candies and chocolate chips.
Pour the batter into the prepared baking dish and smooth the top with a spatula.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool completely before cutting into squares and serving.
