
Mint Jelly Glazed Roasted Chicken
A delicious roasted chicken glazed with expired mint jelly, ensuring food safety by thoroughly cooking the chicken and glaze.
Ingredients
- 1 whole chicken
- 1 cup expired mint jelly
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
Rinse the chicken and pat dry with paper towels.
In a small saucepan, heat the expired mint jelly over low heat until melted.
Place the chicken in a roasting pan and brush it all over with olive oil.
Season the chicken with salt and black pepper.
Brush the melted mint jelly over the chicken, making sure to coat it evenly.
Roast the chicken in the preheated oven for approximately 1 hour and 30 minutes or until the internal temperature reaches 165°F (74°C).
Baste the chicken with the glaze every 30 minutes while roasting.
Remove the chicken from the oven and let it rest for 10 minutes before carving.
Serve the roasted chicken with any remaining glaze on the side.
