  • 4 whole lemons
  • 1 cup sugar

Instructions

Preheat the oven to 350°F.

Slice the lemons into thin rounds, removing any seeds.

In a medium saucepan, combine the sliced lemons and sugar. Cook over low heat, stirring occasionally, until the lemons become soft and the sugar has dissolved, about 10 minutes.

In a separate bowl, beat the eggs. Slowly pour the beaten eggs into the lemon mixture, stirring constantly.

Place the pre-made pie crust in a 9-inch tart pan. Pour the lemon mixture into the crust.

Bake in the preheated oven for 35-40 minutes or until the filling is set and the crust is golden brown.
