
Lemon Garlic Roasted Chicken
Delicious roasted chicken with a tangy lemon garlic flavor using expired lemons that are still safe to consume
Ingredients
- 1 whole chicken (3-4 pounds)
- 2 lemons, whole (past expiration date but still safe to consume)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
1. Preheat the oven to 425°F (220°C).
2. Rinse the chicken under cold water and pat it dry with paper towels.
3. In a small bowl, combine the minced garlic, olive oil, salt, black pepper, and dried thyme.
4. Cut one lemon into thin slices, and squeeze the juice of the other lemon into the garlic mixture.
5. Rub the garlic mixture all over the chicken, including under the skin and inside the cavity.
6. Place the lemon slices inside the chicken cavity.
7. Tie the chicken legs together using kitchen twine and place the chicken on a roasting rack in a roasting pan.
8. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
9. Remove the chicken from the oven and let it rest for 10 minutes before carving.
